Red, Yellow, and Green Curry, and How Thai Restaurants Took Over the World
Red, Yellow, and Green Curry- the so-called "Stoplight" Curries at the center of overseas Thai menus- are, to fans around the world, presented as a single category. But the truth about these three dishes is far more complicated. Not only are they never found together, they were each created in different cities, in different kingdoms, centuries apart. They have their own histories and their own unique flavors, and telling their story means diving into not just the history of Thai curry, but the fascinating path it took to the global mainstream.

    @OTRontheroad The Punjabi curry you ate in Bangkok is nothing like Harappan because the people of the Harappan civilisation moved to the south as the steppe herders moved in from the Caucasus and the Middle East. The ingredients you described as Harappan ingredients being found in the ancient earthenware pots are practically the ingredients used for the culture-defining lentil soup of the South India called “sambar”. Another notable point is, ONLY in the south, people use sesame oil traditionally while in north India, they traditionally use mustard oil. Also, I use “Indian gravy” instead of saying “curry” and resorting to the reduction-to-absurdity.

    I believe that half of Thailand eat Moo Krata more often than the famous Pad Thai, Tom Yum Kung or Green Curry.

    Also there is one style worth mention here. Yum Kai Tod (Fried Chicken Salad). I think in Bangkok they would make it like a cabbage salad but in Hatyai they would use shallot, cilantro, Kung Foi (small Shrimp) and fish sauce. mixed it together and boom one of the most yummy dish in the world 😋

    I once asked a street cart in Bangkok if he really came from Hatyai bacause the sign say so, (I'm from Hatyai myself). I'm really disappointed when he replied No, He's from Nakhon Sri Thammarat 😂

    It's quite a point of pride for me that i 'found' the Bang Nam Phueng Floating Market all by myself, almost by accident, in 2015.. I have been back to Bangkok 8 times in the 9 years since.. and 3 of those times I've managed to convince the friends I'd brought with me [most of them BKK virgins] to trek with me to B Krachao and cycle around the island on a weekend. and then we'd ofc 'magically' come across this amazing market which was a complete surprise to _them_ 😁. And I'd get to live vicariously through their novelty-wonder. •• i am coming back in Mar 2025 with 2 new friends to do 11 days in BKK and Kanchanaburi, and I'll be doing the same thing and ending the day at Erawan Museum, I'm sure the day will blow their mind.

    So basically Indian and Chihese research is just 'nonsense' and American is the fair arbiter. Also this poster is confused about origin or wild rice and origin of cultivated rice. The oldest evidence of farmed rice is from Harappa. Ganga ( not Ganges) isn't even in the picture

    In India Rice recipe changes at every 50km ! Mine fav is in Maharashtra called Modak made from Rice flour made into doe and stuffing it with Coconut and Jaggery and then steaming it! Just beautyyy ❤❤

    My opinion is egipt from where lot of things come.this is not first civilisation on this planet.expetially we know that they fount nuclear traces in todays pakistan.We will never know after alexandria libary burnt down.but in africa there is speaces still what we didnt found yet and we could use them for world feeding.
